Cauli Power Alfredo Spaghetti Recipe
This veg-based sauce is so creamy; your little ones will never suspect the difference.

- In a small non-stick pan over low heat, sauté the minced garlic with the butter until golden, being careful not to burn the garlic.
- In a food processor, place the cooked cauliflower, sautéed garlic & butter, PediaSure® Vanilla, salt and pepper. Blend several minutes until the sauce is very smooth, adding a little more water as needed to obtain a thick but runny consistency. Stir in the parmesan cheese.
- Bring a large pot of water to a boil and cook pasta according to package instructions. Remove from heat, drain the pasta and return to the pot.
- In a pan, fry the bacon until crispy, add the pasta and sauce and toss to combine and heat through, and then serve.

1 medium cauliflower, cut into florets, steamed for 5 minutes
2 tbsp butter
2 cloves garlic, minced
1/2 tsp salt

1 cup parmesan cheese, grated
500 g whole wheat spaghetti
200 g diced bacon, cooked
