No-Bake Energy Bites Recipe

 

These moreish chocolate energy bites will be a hit in lunch boxes, after school, at the office…pretty much anywhere.

Method:

  1. In a large bowl, mix together oats, puffed rice, dried fruit, nuts and ground flaxseed.
  2. In a small jug, combine PediaSure® Chocolate, cocoa, peanut butter, and honey and then warm in the microwave for 40 seconds - 1 minute.
  3. Pour the mixture over the dry ingredients and stir until well combined, and then shape into small balls. Place and store in sealed container and refrigerate.

Ingredients

1 cup oats

1 cup puffed rice cereal

½ cup chopped, mixed dried fruit (such as apricots, dates, cranberries, raisins)

½ cup mixed chopped nuts and seeds (such as walnuts, cashews, pecans, hazelnuts, almonds, pumpkin, sunflower)

¼ cup ground flaxseed

3 scoops PediaSure® Chocolate

2 tbsp cocoa powder

1 cup smooth peanut butter with no salt or sugar

¼ cup honey
