Pizza Frittata

 

With the added protein from the eggs, and vitamins and minerals from PediaSure®, this overhaul of the classic kids’ favourite ticks both moms’ and kiddies’ boxes.

Method:

    1. In a large pan, heat 1 tbsp olive oil over medium heat. Fry onions until just translucent, then add potatoes and continue frying until onions are golden and potatoes are tender but still firm. Add ham and pepperoni, green pepper and mushrooms to pan and cook for 1-2 minutes. Stir in tomato paste until vegetables are coated.
    2. Meanwhile, whisk eggs and PediaSure® Vanilla together. Pour egg mixture into pan and cook over low to medium heat until eggs are almost set but slightly moist on the surface, approximately 10 minutes. To speed up cooking, lift the edges to allow uncooked egg mixture to run to the bottom of the pan.
    3. Sprinkle with cheese and cover until cheese is melted. Alternatively, if pan is oven proof, place under grill for 1-2 minutes until cheese melts. Cut into “pizza slices” and serve.

2 medium white potatoes, thinly sliced

1 small onion, chopped

1/4 tsp salt

1 tbsp olive oil

1/2 cup diced ham and pepperoni

1/2 red pepper, sliced

1 cup sliced mushrooms

100 g tomato purée

1/2 cup part-skim mozzarella cheese, grated
