Flapjacks/Pancakes

 

No mom should be without a classic flapjack recipe for Sunday mornings, especially one as nutritious as this recipe.

Method:

  1. In a big bowl, mix cake flour, PediaSure® Vanilla, and baking powder  to combine. Make a well in the centre.
  2. Combine oil, eggs and milk and pour into the middle of the dry ingredients, stirring to bring the dry ingredients in to combine. Beat for 30 seconds until smooth, and then allow to rest for 20 minutes.
  3. Heat a pan over medium heat with a 1 tbsp oil and 1 tbsp butter, and ladle ½ cup batter onto pan at a time. Once bubbles appear on the surface of the flapjacks, flip them over and cook on the other side until golden brown.
  4. Serve with a drizzle of honey and cut berries.
